I'm sure all of you know what a Bucket List is-if not read more here. Well, I don't have a very long list as of yet, but here goes:
THE List:
1. Be on The Price is Right (this could be in the audience/contestant. my grandmother loved this show and watched about every day. i have very fond memories of watching it with her.)
2. Go back to Europe but this time with Caleb- I've been twice, but never had a husband at the time and I want him to see what I talk about often. I really want to take him to Italy and England.
Sooo that's all I have so far. See I told you it was super short!

Recipe
*UPDATE: I remember when reading the reviews that some people used ricotta cheese in substitute of the cottage cheese so I thought I'd pass that along to y'all. Also this dish is even better as leftovers! :)
I made the one of the best (in my husband's humble opinion) baked spaghetti dishes last night for a late dinner and wanted to share the yummy recipe! I will admit its not from any fancy cookbook I simply googled "easy baked spaghetti recipe" and this is what I found. :)
Baked Spaghetti

PREP TIME 25 Min
COOK TIME 1 Hr
READY IN 1 Hr 25 Min
Yields 8 servings
INGREDIENTS
* 1 (16 ounce) package spaghetti
* 1 pound ground beef
* 1 medium onion, chopped
* 1 (26 ounce) jar meatless spaghetti sauce
* 1/2 teaspoon seasoned salt
* 2 eggs
* 1/3 cup grated Parmesan cheese
* 5 tablespoons butter, melted
* 2 cups small curd cottage cheese
* 4 cups shredded mozzarella cheese
DIRECTIONS
1. Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce and seasoned salt; set aside.
2. In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat.
3. Place half of the spaghetti mixture in a greased 13-in. x 9-in. x 2-in. baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Cover and bake at 350 degrees F for 40 minutes. Uncover; bake 20-25 minutes longer or until cheese is melted.
**I didn't include meat because I wanted a lighter taste, but I'm sure it's great with it! I also used a cookie sheet underneath the casserole dish to catch any spills since I used a smaller dish and that helped a lot.

Rouge heard about one of my favorite weeks of the year, New York Fall Fashion Week, last week and decided she needed to do a little updating to her wardrobe. Check out her new harness in one of Fall's hot new colors, plum!
Anniversary Party
Two weeks ago, on this day, Caleb and I celebrated our 2nd wedding anniversary! We were also invited by my parents to a little get together in our honor last week to congratulate us on completing another year of marriage! We were joined by my sister-in-law Betsy, and two of my nieces Rebecca and Emily. Taylor couldn't make it at the last minute due to his work, but he was very much missed! It was so uplifting to be encouraged in our marriage by those around us who have been married much longer than us (We celebrated Taylor and Betsy's 10 year anniversary in January!). I didn't take any pictures that night, but I thought I'd give y'all a taste of the party food that was lovingly prepared by my Mom.



Caleb and I feel so blessed to have a healthy marriage. One piece of advice I was given before we ever met was for each person in the relationship to always strive to serve your spouse and think of their needs before yours. Caleb and I try to follow this advice (although Caleb is much better at it than I think I am!) and it is amazing how fulfilled we are when we forget about ourselves. We know that the world throws things at all of us that can cause division and heartache in a marriage so we know how blessed we are to have family and friends that rally behind us. We feel so thankful for all those that support and love us so much!!

Charleston!
Our second anniversary was September 8th. My sweet and thoughtful husband surprised me on Labor day with an anniversary trip! Last Monday morning he says..."How would you like to go to Charleston with me?" I was 100% surprised and thrilled to head out the door on a getaway! The first day there we arrived at our hotel, The Renaissance and I completely fell in love with the place! Caleb made sure we had the best room at the hotel complete with a corner balcony!




Note to any future tourists in Charleston: The Renaissance has the BEST breakfast I have ever had! Believe me when I say they do it RIGHT!!

This is a picture of the John C. Calhoun house we enjoyed touring.

We enjoyed a beautiful carriage tour on the morning of our anniversary and I would have to say that this was my absolute favorite thing we did throughout the whole trip! C and I usually steer clear of anything "touristy" when visiting new places and enjoy fitting in with the locals, but I would recommend this to anyone wanting to learn more about the city.

We were half a block away from King street and its amazing shopping district. I discovered a few stores I completely fell in love with including Pierre Deux. Ahh french country...beautiful!

For our anniversary dinner Caleb had another two surprises up his sleeve, he had made dinner reservations at this wonderful restaurant called, Fig. We both loved their food and the whole experience. Their menu changes daily, which is neat when you see your wedding date at the top of their menu! They also change out your silverware for you with each course! We split an heirloom tomato salad as an appetizer (very delicious) and I had the Heirloom Potato Agnolotti with zucchini, truffles, and corn and Caleb had the Cornmeal Dusted Triggerfish with blue crab, field pea succotash, and nicolas potatoes in a corn broth. We split their lemon cheesecake with blueberry compote. MMMMM!!

Caleb also had another surprise left in store when he pulled out a beautifully wrapped box from Charlotte's with a hot pink bow...I was totally shocked at what I found inside- this beautiful sterling silver necklace by Kenneth Jay Lane one of my favorite jewelry designers (some of you may remember my giraffe bracelet, this is the same guy)! I can't wait to wear it this Fall. He sure does spoil me, goodness!

On Wednesday, we packed up and headed over to the Hunley Museum. Caleb and his family are descendants of H.L. Hunley. He is Caleb's great great great great uncle. We have been wanting to do this museum visit for a long time and really enjoyed seeing many artifacts from the submarines. For more info on H.L. Hunley go here.
We had not gone on a vacation of this sort since our honeymoon! I feel so blessed to have had a treat like this and such a thoughtgful husband who thought through every single detail. Can't wait to celebrate all the years ahead!!

Tennis pro or beaver? You decide...
Putt Putt!
After our putt putt adventure at the beach, Caleb and I were excited to play putt putt again, and being two kids at heart, we couldn't resist the arcade as well! We hadn't been back to this place since Dad's birthday three tears ago! There is this one game I remembered that gives out WAY too many tickets for a simple point so between the two of us we racked up 700 tickets for barely lifting a finger! And no, we didn't feel bad taking so many tickets because the game has been like that for over three years now and its not broken! These are the fruits of our labor...the slap bracelet lasted 3 minutes after Rouge got a hold of it and the playdough set still hasn't made its way out of the packaging yet. :)
Rebecca's 7th Birthday!
Emerald Isle
In August we joined my immediate and extended family for our annual trip to Emerald Isle! Most of my family could make it 23 out of 30 isn't too bad! I always look forward to this trip every year and treasure all the family memories made. We took Rouge along with us and she enjoyed the beach so much. Especially the freedom to dig to her hearts content- I wish we had taken pictures of the time she (a 5 lb. dog) dug a hole 2 feet deep! Enjoy these pictures I took on Caleb's phone throughout the week!





My Dad brought their Wii and we had a great time playing bowling (seen below), the boys got into boxing, and my personal fav was playing doubles with C in tennis! Some of us worked on this puzzle at night. At the end, the last piece was misplaced until Betsy heroically found the missing piece! Yay!





A favorite snack throughout the week was frozen grapes. They're very easy- simply put cleaned grapes into a freezer bag in the freezer! When you take them out of the freezer, let the grapes sit a little bit and they are like a grape slushie! MMMM...

My favorite time of the day on the beach was at dusk. It seems like everything slows down then and of course you can beat the heat that way. Mom and Dad joined us for a walk one evening and I couldn't resist the opportunity to snap a few pictures of these lovebirds! Aren't they cute?!





Emily and Rebecca enjoyed building sand castles, playing with Rouge, helping Grandmother cook, playing with puzzles, collecting sea shells, flying kites, the aquarium, and exploring the beach!



Caleb and I ventured out to explore more of our surroundings one afternoon and discovered Fort Macon. The beach was so flat you could see so far away. This is probably old news, but I didn't know dead Christmas trees were used to protect the dunes. Pretty cool.



Caleb and I had a couple of days at the end of the week when everyone had gone back to Raleigh for various reasons. We visited Beaufort and ate at the beloved Beaufort Grocery Company. If you look closely, you can see the wild horses that roam freely on certain parts of the beaches. We also had a great time playing putt-putt one evening and enjoyed visiting with extended family. Until next year!!
